Fafda is a fried crispy crunchy tasty snack made with besan (gram flour), laced with carom seeds and black pepper. Fafda is a famous snack of Gujarat which is eaten hot with jalebi, curry, and green chilies. Fafda served with papaya sambharo and besan chutney is an awesome combination. 

Fafda with papaya sambharo and fried green chilies is one of the favourite breakfasts of every Gujarati Family. In Gujarat, during the Dusshera festival, fafda along with papaya chutney and jalebi are sold like hot cake.

Fafda recipe is not difficult and in fafda there is no need for so many ingredients.

Ingredients 


  • 1 cup gram flour (Besan)
  • 1/4 teaspoon Baking Soda (Papadiyo Kharo)
  • 1/4 teaspoon Carom Seeds (Ajwain)
  • 1 teaspoon Oil
  • Salt As Per Taste
  • 1 cup water (As Required)
  • 1 pinch asafoetida (Hing)
  • Oil For Deep-Frying

How To Make Fafda

Step 1:

To make fafda, combine all the ingredients in a deep bowl and mix well.

Step 2: 

Knead into a soft dough using enough water till smooth.

Step 3:

Once the dough has been prepared, it still might be sticky. Therefore add oil to it and knead it again for 2-3 minutes more.

Step 4:

Once done divide the dough into 12-15 equal-sized portions and make them into small balls.

Step 5:


Place the roll on one side of the chopping board or any flat surface with the base of your palm press and stretch it vertically with light force from one end to the other to form a long strip.

Step 6:

Loosen the strip gently with a sharp knife.

Step 7:

Heat the oil in a deep non-stick pan, add the fafda, and deep-fry on a medium flame till it turns crispy and light brown in color. You can deep-fry 2 to 3 fafdas at a time. Drain on absorbent paper.

Step8:

Serve the Gujarati Fafda along with Jalebi, Gujarati Kadhi, and Papaya salad.

Ingredients 

For Kadhi

  • 3 Cups curd or buttermilk
  • 5 tbsp Gram flour
  • 1 tbsp mustard seed
  • 1 tbsp cumin seeds
  • 1/2 tbsp turmeric powder
  • 2 green chilies chopped
  • 1-inch ginger finely chopped
  • 1/2 tbsp asafoetida powder
  • 1 finely chopped onion
  • 6 tbsp oil
  • 2 cups of water
  • 1 tbsp sugar
  • Salt to taste

For Pakoras

  • 1 cup gram flour
  • 1 cup finely chopped methi
  • 2 green chilies
  • 1 tbsp red chili powder
  • 2 tbsp oil
  • salt to taste
  • oil for frying
  • enough water for the batter
  • finely chopped coriander

How To Make Pakora Kadhi


How To Make Pakora

Step 1:


Take a deep bowl and add gram flour to it.

Step 2:


Combine all the ingredients along with approx 1/4 cup of water in a bowl.

Step 3:



 
Mix well all the ingredients to make a thick batter.

Step 4:




 Heat the oil in a deep pan. When oil is enough hot take one tablspoon of oil and pour it into the batter, to make soft pakoras. Now drop spoonfuls of the batter into the hot oil and deep-fry a few at a time till they turn golden brown in colour from all sides.


Step 5:


Take all pakoras on a plate and keep it aside.

How To Make Kadhi

 Step 1:


Take a deep bowl and combine curd, gram flour, turmeric powder, salt, and 2 cups of water. and mix it very well and blend it properly so that no lumps are formed. Now keep it aside.

Step 2:


Heat oil in a deep frying pan, add the cumin seeds, mustard seeds, and asafoetida.

Step 3:


Now add finely chopped onions, green chilies, ginger paste add salt to taste, and turmeric powder to it. let it be simmer for a minute.

Step 4:


Lower the flame, add the curd-besan mixture to fried ingredients. 

Step 5:

In a deep vessel boil the curd and gram flour mixture. Simmer for 15 minutes. Cook till the curry consistency is thick.

Step 6:



Mix pakoras in boiling curry. After mixing pakoras to boil curry for some time and then add sugar and simmer for a minute. Switch off the flame when the desired consistency found. Garnish with coriander leaves.

Ingredients

  • 6 Happy Happy Biscuits Packets (Rs 5 each)
  • 2 tbsp Sugar
  • 1 bowl Milk
  • 1/2 tbsp Eno
  • Oil (as needed)


How To Make Biscuit Cake:


Step 1


Take a Mixture jar to add the happy happy biscuit, sugar, and blend to make a fine powder.

Step 2


Transfer that powder to the mixing bowl. Now add milk in it and mix it well. The cake batter is ready. keep it aside for a while.

Step 3

Grease the round cake tin with oil set aside.

Step 4

In a large cooker add some amount of salt and put one stand in it and remove its whistle and ring. than preheat for 5 Minutes.

Step 5



Add Eno powder to the better stir it in one direction only. now pour that batter into the cake tin.

Step 6

Place the cake tin on a stand and then close the cooker. Steam the takeover low heat for 25 minutes. When done check inserted toothpick or knife in the cake. If it comes out clean the cake is ready.

Step 7


Remove the cake and allow the cake to cool down completely .once cooled using a knife clear edges and transfer the cake on a serving plate.

Step 8

Your spongy cake is ready now. Garnish it with your favorite ingredients.

Sambar Recipe At Home

Ingredients

     

For Sambar Recipe

  • 3/4 cup Toor dal
  • 1 tbsp turmeric
  • salt as per taste
  • 1/4 cup coriander leaves finely chopped

     

Vegetables For Sambar

  • 1 cup finely chopped onion
  • 1 medium tomato finely chopped
  • 1 to 2 vegetable drumsticks
  • 1 green chili slit
  • 1 cup crushed bottle gourd

    

  Tadka For Sambar Recipe

  • 2 tbsp oil
  • 1 spring curry leaves
  • 1/2 tbsp cumin seeds (jeera)
  • 1/2 tbsp mustard seeds
  • 1/2 tbsp asafoetida (hing)
  • 1 red chili 
  • 2 tbsp coriander powder
  • 2 tbsp green chili garlic paste
  • 2 tbsp lemon juice
  • 2 tbsp readymade sambar masala powder


How To Make Sambar:


Step 1


Wash Toor dal a few times in cooker until the water runs clear. Drain all the water and add the dal in a pressure cooker. Also, add 1/4 tbsp turmeric powder and 1/2 tbsp salt and add 2 cups of water and mix.

Cover and pressure cook dal for 4 to 5 whistles or 10 to 12 minutes on medium flame.

Step 2


When the pressure settles down on its own, open the lid and check the dal. The dal should be completely cooked and mushy. Mash the dal with a spoon or wired whisk. Cover and keep aside. You can see the consistency of dal in the picture.

Step 3


Rinse all the veggies. Scrape the drumsticks lightly & rinse. Chop them to 2-inch pieces. Finely chop onions and tomatoes. Make chili and garlic paste. Wash bottle gourd and crush it. set those all veggies aside.

Step 4


Meanwhile, heat another pan with oil. Add mustard, cumin & methi.  When they begin to sizzle, add curry leaves, broken red chili. 

When the leaves turn crisp, off the heat add hing. You can also add 1/8 to 1/4 tbsp of sambar powder to the hot pan. 

Step 5


Now add chopped onion into the pan. saute it for 2 minutes. now add all the chopped veggies to the pan and saute it for 5 to 6 minutes. When the vegetables are completely cooked, add turmeric and & salt. Add red chili powder and coriander powder mixes it well.

Step 6


Add smooth dal, mix well and bring it to a boil. Now add lemon juice and sambar masala into dal. Stir well. Check if there is enough salt $ sourness. If needed add more. 

Step 7


Add coriander leaves. And serve sambar with rice, idli, vada or dosa.

Ingredients

  • 2 cups split black gram flour (Adad no lot)
  • 2 cups clarified ghee
  • 1/2 cup gum (gund)
  • 2 cup of sugar powder
  • 1/2 cup readymade adadiya masala powder
  • 1 cup chopped dry fruits for garnish


How To Make Adadiya Pak


Step 1


Add urad daal atta in a mixing bowl now add ghee and mix it very well. Rub the flour with palm for 3-4 minutes.

Step 2


Heat ghee in a pan and fry edible gum on high flame. Finely chopped edible gun and keep aside.

Step 3

Heat the ghee in Kadai or heavy bottom Kadai. Add flour mixture.

Step 4


Continuously stir it on medium flame till the mixture is brown in color.

Step 5


Now add sugar powder in that mixture. When flour starts to get brown color, add fried edible gum. Saute for a couple of minutes.

Step 6


Now add readymade adadiya masala powder to that mixture. Now continuously stir it.

Step 7


Turn off the flame and add chopped nuts. Mix well. Allow the mixture to cool a bit.

Step 8


Allow it to set for a while. Give a shape of your choice.
